A hearty, flavorful one-pan skillet dinner featuring savory kielbasa sausage, fresh kale, and tender potatoes. Quick to prepare, perfect for a busy weeknight.
Ingredients
- 1 pound kielbasa sausage sliced into 1/2-inch rounds
- 1 tablespoon olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups kale chopped
- 1 medium potato diced into 1/2-inch pieces (optional)
- 1/2 cup chicken broth
- salt to taste
- black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add sliced kielbasa and cook until browned, about 5-7 minutes. Remove kielbasa from skillet and set aside.
- Add onion to the skillet and cook until softened, about 3-4 minutes. Add garlic and diced potato (if using) and cook for another 5-7 minutes, stirring occasionally, until potatoes start to soften.
- Stir in the chopped kale and chicken broth. Cover and cook for 3-5 minutes, or until kale is wilted and tender.
- Return kielbasa to the skillet. Stir everything together and season with salt and pepper to taste. Serve hot.
Notes
For an extra kick, add a pinch of red pepper flakes. Leftovers store well in the fridge for up to 3 days. Serve with a sprinkle of Parmesan cheese or a dollop of sour cream.
