Ingredients
  

  • 1 pound kielbasa sausage sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups kale chopped
  • 1 medium potato diced into 1/2-inch pieces (optional)
  • 1/2 cup chicken broth
  • salt to taste
  • black pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add sliced kielbasa and cook until browned, about 5-7 minutes. Remove kielbasa from skillet and set aside.
  • Add onion to the skillet and cook until softened, about 3-4 minutes. Add garlic and diced potato (if using) and cook for another 5-7 minutes, stirring occasionally, until potatoes start to soften.
  • Stir in the chopped kale and chicken broth. Cover and cook for 3-5 minutes, or until kale is wilted and tender.
  • Return kielbasa to the skillet. Stir everything together and season with salt and pepper to taste. Serve hot.

Notes

For an extra kick, add a pinch of red pepper flakes. Leftovers store well in the fridge for up to 3 days. Serve with a sprinkle of Parmesan cheese or a dollop of sour cream.
