Ingredients
  

  • 1.5 lb pork loin thinly sliced
  • 4 cloves garlic minced
  • 1 tsp salt
  • 2 leaves bay leaves
  • 0.5 cup light beer
  • 1 tbsp sweet paprika
  • 1 cup red wine dry
  • 2 tbsp olive oil
  • 1 small onion chopped
  • 0.5 tsp black pepper
  • 0.5 cup chicken broth optional

Instructions
 

  • Slice the pork loin into thin, medallion-like pieces, about 1/4 to 1/2 inch thick.
  • In a large bowl, combine the sliced pork with minced garlic, salt, bay leaves, beer, and paprika. Mix well, ensuring all pork is coated. Cover and marinate in the refrigerator for at least 1 hour, or up to 4 hours for deeper flavor.
  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Remove pork from marinade, reserving the marinade. Brown the pork in batches on all sides until lightly golden. Remove pork and set aside.
  • Add the chopped onion to the pot and sauté until softened, about 3-5 minutes.
  • Pour in the reserved marinade and red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
  • Return the browned pork to the pot. Add black pepper and chicken broth if using. Ensure pork is mostly submerged in the liquid.
  • Reduce heat to low, cover, and simmer slowly for 1.5 to 2 hours, or until the pork is fork-tender. Stir occasionally.
  • Taste and adjust seasoning if necessary. Serve hot with your preferred side dish.

Notes

Serve this tender pork loin with creamy mashed potatoes, steamed rice, or crusty bread to soak up the delicious sauce. For a spicier kick, add a pinch of chili flakes to the marinade. A different type of beer, like a dark ale, can add a richer flavor profile.
