Ingredients
  

  • 1 can evaporated milk (12 oz)
  • 0.5 cup granulated sugar
  • 2 tbsp cornstarch
  • 0.25 tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • In a medium saucepan, whisk together granulated sugar, cornstarch, and salt until well combined.
  • Gradually whisk in the evaporated milk until the mixture is smooth and free of lumps.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil (about 5-7 minutes). Be careful not to scorch the bottom.
  • Remove the saucepan from the heat and stir in the vanilla extract.
  • Pour the dessert into individual serving dishes or a larger bowl. To prevent a skin from forming, cover the surface directly with plastic wrap.
  • Chill in the refrigerator for at least 1 hour, or until thoroughly set and cold. Serve chilled.

Notes

For variations, stir in 2 tablespoons of cocoa powder with the cornstarch for a chocolate version. You can also layer with fresh berries or serve with a dollop of whipped cream once chilled. Store leftovers in an airtight container in the refrigerator for up to 3 days.
