- 1.5 lb beef sirloin thinly sliced against the grain
- 1 tbsp unsalted butter
- 1 tbsp olive oil
- 1 medium yellow onion finely chopped
- 8 oz cremini mushrooms sliced
- 2 cloves garlic minced
- 2 tbsp all-purpose flour
- 1 cup beef broth low sodium
- 0.5 cup sour cream full fat
- 1 tsp Dijon mustard
- salt freshly ground black pepper to taste
- 2 tbsp fresh parsley chopped
Instructions
- Pat beef dry and season generously with salt and pepper.
- In a large skillet, melt butter and olive oil over medium-high heat. Brown beef in batches until seared; remove from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add mushrooms and cook until they release their liquid and brown, about 7-10 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant. Sprinkle flour over the vegetables and stir for 1 minute to coat.
- Gradually whisk in the beef broth and Dijon mustard, stirring constantly until the sauce thickens and comes to a simmer. Return the browned beef to the skillet.
- Reduce heat to low, then stir in the sour cream until just combined and heated through. Do not boil after adding sour cream.
- Taste and adjust seasoning with salt and pepper as needed. Serve immediately over egg noodles or rice, garnished with fresh parsley.
