A robust and flavorful brunch dish perfect for the day after, combining sweet caramelized onions, pungent garlic, tender potatoes, and eggs for a satisfying start to your day.
Ingredients
- 2 yellow onions diced
- 8 cloves garlic minced
- 2 tablespoons olive oil
- 4 medium potatoes diced into 1/2-inch cubes
- 1 large bell pepper any color
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt or to taste
- 4 large eggs
- 2 tablespoons fresh parsley chopped
Instructions
- Heat olive oil in a large skillet or cast-iron pan over medium-low heat. Add diced yellow onions and cook slowly for 15-20 minutes, stirring occasionally, until deeply caramelized and sweet.
- Add minced garlic to the skillet and cook for another 1-2 minutes until fragrant, being careful not to burn it.
- Increase heat to medium-high. Add diced potatoes and bell pepper to the skillet. Cook for 15-20 minutes, stirring periodically, until potatoes are tender and browned. Season with smoked paprika, salt, and black pepper.
- Create four small wells in the hash. Crack an egg into each well. Cover the skillet and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your preference.
- Alternatively, scramble the eggs separately and stir them into the hash, or simply serve fried eggs on top.
- Garnish with fresh chopped parsley and serve immediately.
