Ingredients
  

  • 2 yellow onions diced
  • 8 cloves garlic minced
  • 2 tablespoons olive oil
  • 4 medium potatoes diced into 1/2-inch cubes
  • 1 large bell pepper any color
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt or to taste
  • 4 large eggs
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large skillet or cast-iron pan over medium-low heat. Add diced yellow onions and cook slowly for 15-20 minutes, stirring occasionally, until deeply caramelized and sweet.
  • Add minced garlic to the skillet and cook for another 1-2 minutes until fragrant, being careful not to burn it.
  • Increase heat to medium-high. Add diced potatoes and bell pepper to the skillet. Cook for 15-20 minutes, stirring periodically, until potatoes are tender and browned. Season with smoked paprika, salt, and black pepper.
  • Create four small wells in the hash. Crack an egg into each well. Cover the skillet and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your preference.
  • Alternatively, scramble the eggs separately and stir them into the hash, or simply serve fried eggs on top.
  • Garnish with fresh chopped parsley and serve immediately.

Notes

For extra protein, add diced cooked sausage or bacon. For a vegetarian option, include sautéed mushrooms or spinach. Serve with a sprinkle of fresh parsley or chives.
