Ingredients
- 1 whole branzino cleaned and scaled (about 1-1.5 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper freshly ground
- 1 lemon sliced plus extra wedges for serving
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the branzino dry with paper towels. Score the fish 2-3 times on each side with a sharp knife to help it cook evenly and absorb flavors.
- Drizzle inside and outside of the fish with olive oil. Season generously with salt and pepper, making sure to rub it into the scores.
- Insert lemon slices, rosemary, and thyme sprigs into the cavity of the fish. Place a few lemon slices and herb sprigs on top of the fish as well.
- Roast for 18-22 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time may vary depending on the size of the fish.
- Serve immediately with extra lemon wedges for squeezing over the fish.
Notes
Serve your roasted branzino with a side of steamed asparagus, roasted new potatoes, or a fresh green salad. For an extra kick, add a pinch of red pepper flakes to the seasoning. Check for doneness by inserting a fork into the thickest part of the fish; it should flake easily.
