Ingredients
  

  • 1 large piece fresh ginger about 4-5 inches
  • 8 cups water
  • 1/2 cup apple cider vinegar
  • 1/4 cup fresh lemon juice from 2-3 lemons
  • 1/4 cup maple syrup or honey optional

Instructions
 

  • Wash the large piece of ginger thoroughly. You can peel it or leave the skin on, depending on your preference.
  • Thinly slice the ginger into rounds or julienne strips. The more surface area, the stronger the ginger flavor will be.
  • In a large pitcher or jar, combine the sliced ginger, water, apple cider vinegar, and fresh lemon juice.
  • Stir all the ingredients well to ensure they are fully mixed.
  • If using, add the maple syrup or honey to taste and stir until dissolved. Adjust sweetness as desired.
  • Cover the pitcher and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and deepen.
  • Before serving, you can strain out the ginger slices for a smoother drink, or leave them in for a more intense flavor. Serve chilled over ice.

Notes

For an authentic taste, consider adding a touch of maple syrup or molasses to sweeten. Adjust the amount of ginger, lemon, and vinegar to your preference. Switchel can be stored in the refrigerator for up to 3-4 days. Serve over ice for extra refreshment. You can also experiment with adding a pinch of cayenne pepper for a kick or mint leaves for an added layer of freshness.
