Ingredients
  

  • 2 cup Dried hibiscus leaves (zobo leaves)
  • 1 tbsp Ginger (grated or thinly sliced)
  • 1 ripe pineapple (peeled and chopped)
  • 10 cup Water
  • to taste g Sugar (optional)

Instructions
 

  • Rinse the dried hibiscus leaves thoroughly under cold water to remove any dust or impurities.
  • Peel and chop the pineapple into small pieces, then grate or thinly slice the ginger.
  • In a large pot, combine the rinsed hibiscus leaves, chopped pineapple, and ginger.
  • Add 10 cups of water to the pot and bring it to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-30 minutes.
  • Remove the pot from the heat and allow the Zobo mixture to cool completely to room temperature.
  • Once cooled, strain the mixture through a fine-mesh sieve or cheesecloth, pressing out all the liquid from the leaves and fruit.
  • Discard the strained solids. Taste the Zobo drink and add sugar to your desired sweetness, stirring until dissolved.
  • Chill the Zobo drink thoroughly in the refrigerator before serving. Enjoy cold!

Notes

For added flavor, consider adding a cinnamon stick, a few cloves, or a dash of chili powder during the simmering stage. Ensure the drink cools completely before straining and chilling for the best taste. Zobo can be stored in the refrigerator for up to 3-5 days.
