A quick, savory Mediterranean-inspired side dish featuring tender zucchini and salty feta cheese. Perfect for a busy weeknight, ready in just 15 minutes using one pan.
Ingredients
- 2 medium zucchini grated
- 0.5 cup feta cheese crumbled
- 1 tablespoon olive oil
- 1 clove garlic minced
- 0.25 teaspoon black pepper
- Pinch salt to taste
- 1 tablespoon fresh parsley chopped (optional
Instructions
- 1. Grate zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towels and gently squeeze out excess moisture.
- 2. Heat olive oil in a large non-stick pan or skillet over medium-high heat.
- 3. Add minced garlic to the pan and sauté for 30 seconds until fragrant.
- 4. Add the squeezed grated zucchini to the pan and cook for 8-10 minutes, stirring occasionally, until tender and lightly browned.
- 5. Remove the pan from heat. Stir in the crumbled feta cheese and black pepper. Taste and add a small pinch of salt if needed, keeping in mind that feta is salty.
- 6. Garnish with fresh chopped parsley if desired and serve warm.
Notes
For extra flavor, add a pinch of dried oregano or fresh mint. You can also toss in a handful of cherry tomatoes during the last few minutes of cooking. Adjust salt sparingly, as feta cheese is already quite salty. This dish is excellent served warm or at room temperature.
