Ingredients
  

  • 1 pound boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream optional
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 8 ounces fettuccine or spaghetti

Instructions
 

  • Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.
  • While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add minced garlic to the skillet and cook for 1 minute until fragrant.
  • Pour in chicken broth and heavy cream (if using). Bring to a simmer and cook for 2-3 minutes until slightly thickened.
  • Return chicken to the skillet. Add cooked pasta, Parmesan cheese, and chopped parsley. Toss to combine. If sauce is too thick, add a splash of reserved pasta water until desired consistency.
  • Season with additional salt and pepper to taste. Serve immediately.

Notes

For extra flavor, consider using boneless, skinless chicken thighs. If you enjoy a bit of heat, add a pinch of red pepper flakes with the garlic. Serve this pasta with a fresh green salad for a complete meal.
