Ingredients
- 1 pound boneless skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 4 cloves garlic minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream optional
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley chopped
- 8 ounces fettuccine or spaghetti
Instructions
- Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream (if using). Bring to a simmer and cook for 2-3 minutes until slightly thickened.
- Return chicken to the skillet. Add cooked pasta, Parmesan cheese, and chopped parsley. Toss to combine. If sauce is too thick, add a splash of reserved pasta water until desired consistency.
- Season with additional salt and pepper to taste. Serve immediately.
Notes
