Ingredients
- 2 fillet salmon skin on or off
- 0.25 cup teriyaki sauce low sodium preferred
- 2 cup cooked rice brown or white
- 1 cup broccoli florets fresh or frozen
- 1 tablespoon sesame seeds for garnish
- 0.5 teaspoon olive oil or other cooking oil
Instructions
- Pat salmon fillets dry with a paper towel. Place them in a shallow dish or zip-top bag.
- Pour teriyaki sauce over the salmon, ensuring both sides are coated. Marinate for at least 10 minutes, or up to 30 minutes in the refrigerator.
- While salmon marinates, cook rice according to package directions and steam broccoli until tender-crisp.
- Heat olive oil in a non-stick skillet over medium-high heat.
- Place marinated salmon fillets skin-side down (if applicable) in the hot skillet. Cook for 4-6 minutes per side, or until cooked through and easily flakes with a fork. Baste with any remaining teriyaki sauce in the pan during cooking.
- Serve the cooked salmon immediately with the cooked rice and steamed broccoli. Garnish generously with sesame seeds.
Notes
For extra flavor, sprinkle chopped green onions or a squeeze of lime juice over the top before serving. You can also bake the salmon at 400°F (200°C) for 12-15 minutes instead of pan-frying. Adjust the amount of teriyaki sauce to your taste preferences.
