A rich and flavorful Italian-inspired chicken dish featuring pan-seared chicken breasts simmered in a creamy sauce with sun-dried tomatoes, spinach, and garlic, perfect for a quick weeknight meal.
Ingredients
- 2 tbsp olive oil extra virgin
- 4 medium boneless skinless chicken breasts
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp Italian seasoning
- 4 cloves garlic minced
- 1/2 cup chicken broth low sodium
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes packed in oil
- 2 cups fresh spinach
- 1/4 cup Parmesan cheese grated
Instructions
- Season chicken with salt, black pepper, and Italian seasoning on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant. Pour in chicken broth, scraping up any browned bits from the bottom of the pan.
- Stir in heavy cream and sun-dried tomatoes. Bring the sauce to a gentle simmer and cook for 3-5 minutes, allowing it to thicken slightly.
- Add fresh spinach to the skillet and cook until it wilts, about 2-3 minutes.
- Stir in grated Parmesan cheese until it melts and the sauce is smooth. Return the cooked chicken to the skillet, coating it thoroughly in the creamy sauce. Serve immediately with your favorite side.
Notes
Serve this dish with pasta, rice, or crusty bread to soak up the delicious sauce. For a lighter version, use half-and-half instead of heavy cream. Add sliced mushrooms with the garlic for an extra layer of flavor.
