Ingredients

  • 200 g linguine or spaghetti
  • 300 g shrimp peeled and deveined
  • 4 cloves garlic minced
  • 1/2 tsp red pepper flakes or more to taste
  • 1/4 cup olive oil extra virgin
  • 1/4 cup white wine or chicken broth
  • 2 tbsp fresh parsley chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  • Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  • While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; cook for 1 minute until fragrant, being careful not to burn the garlic.
  • Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  • Pour white wine (or broth) into the skillet, scraping up any browned bits. Let it simmer for 1-2 minutes.
  • Add the cooked pasta to the skillet, along with a splash of reserved pasta water. Toss to coat. Add the cooked shrimp and fresh parsley. Toss again.
  • Season with salt and pepper to taste. If needed, add more pasta water to achieve desired consistency. Serve immediately.

Notes

Adjust chili flakes to your spice preference. A squeeze of lemon juice at the end brightens the flavors. Serve with a sprinkle of fresh parsley or Parmesan cheese.
