Ingredients
- 1 pound shrimp peeled and deveined
- 4 cups broccoli florets fresh or frozen
- 2 tablespoons soy sauce low sodium
- 1 tablespoon oyster sauce optional
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil toasted
- 1 teaspoon sugar or honey
- 1/4 cup chicken broth or water
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil or canola oil
- 3 cloves garlic minced
- 1 inch fresh ginger grated
- 2 green onions sliced for garnish
Instructions
- In a small bowl, whisk together soy sauce, oyster sauce (if using), rice vinegar, sesame oil, sugar, chicken broth, and cornstarch until smooth. Set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until shimmering. Add broccoli florets and stir-fry for 3-5 minutes until tender-crisp and slightly charred. Remove from pan and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the wok. Add minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
- Add shrimp to the wok and stir-fry for 2-3 minutes until they turn pink and are cooked through. Do not overcook.
- Return the cooked broccoli to the pan with the shrimp. Give the prepared sauce mixture another quick whisk and pour it over the shrimp and broccoli.
- Cook, stirring constantly, until the sauce thickens and evenly coats all the ingredients, about 1-2 minutes.
- Remove from heat, garnish with sliced green onions, and serve immediately with your choice of rice or noodles.
Notes
Serve over steamed rice or noodles for a complete meal. For an extra kick, add a pinch of red pepper flakes to the sauce. You can also include other quick-cooking vegetables like sliced bell peppers or carrots. Ensure your wok or pan is very hot before adding ingredients to achieve that classic stir-fry char. Do not overcook the shrimp, as they can become tough.
