This incredibly easy one-pan recipe brings together tender salmon, vibrant broccoli, and sweet potatoes, all coated in a delicious orange-honey glaze. Perfect for a healthy, flavorful weeknight meal with minimal cleanup.
Ingredients
- 4 count salmon fillets (about 6 oz each)
- 1 pound sweet potatoes peeled and diced into 1-inch cubes
- 1 pound broccoli florets fresh or frozen
- 2 tablespoons olive oil
- 1/4 cup orange juice fresh squeezed preferred
- 2 tablespoons honey
- 1 tablespoon soy sauce or tamari for gluten-free
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper freshly ground
- 1 tablespoon fresh parsley chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the diced sweet potatoes and broccoli florets. Drizzle with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss to coat evenly.
- Spread the seasoned vegetables in a single layer on one side of the prepared baking sheet. Roast for 10 minutes.
- While the vegetables are roasting, prepare the orange-honey glaze. In a small bowl, whisk together the orange juice, honey, soy sauce, garlic powder, remaining 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.
- After 10 minutes, remove the baking sheet from the oven. Arrange the salmon fillets on the other side of the baking sheet. Pour about half of the orange-honey glaze over the salmon fillets.
- Return the baking sheet to the oven and continue to roast for another 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp and slightly caramelized. You can brush the salmon with the remaining glaze halfway through this second roasting period.
- Remove from oven. Garnish with fresh chopped parsley, if desired. Serve immediately and enjoy your delicious one-pan meal!
Notes
For crispier vegetables, avoid overcrowding the sheet pan; use two if necessary. You can substitute regular potatoes, asparagus, or bell peppers for broccoli and sweet potatoes. Adjust honey and orange juice to taste. Ensure salmon is cooked through but not overcooked for the best texture.
