Quick Satay Chicken Noodles

Ingredients
- 400 g chicken thighs cut into bite-sized pieces
- 1 onion diced
- 2 tbsp dark soy sauce
- 50 ml Shaoxing rice wine or dry sherry
- 1 heaped tsp garlic and ginger paste
- 1 tbsp vegetable oil
- 300 g egg noodles
- 100 g creamy peanut butter or crunchy
- 100 ml coconut milk full-fat
- 1 tbsp lime juice freshly squeezed
- 1 tsp brown sugar
- 1 tsp chili garlic sauce or sriracha
- 50 ml water or chicken broth
- fresh cilantro for garnish
- crushed peanuts for garnish
Instructions
- Prepare Chicken: In a bowl, toss the chicken thighs with 1 tbsp of the dark soy sauce, Shaoxing rice wine, and garlic and ginger paste. Let it marinate for at least 10 minutes while you prepare other ingredients.
- Sauté Aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the diced onion and cook until softened, about 3-4 minutes.
- Cook Chicken: Add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
- Prepare Noodles: While the chicken cooks, bring a pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain well.
- Make Satay Sauce: In a separate small bowl, whisk together the peanut butter, coconut milk, remaining 1 tbsp dark soy sauce, lime juice, brown sugar, chili garlic sauce, and 50ml of water or chicken broth until smooth. If the sauce is too thick, add a little more water until it reaches a pourable consistency.
- Combine & Serve: Pour the satay sauce over the cooked chicken and onions in the skillet. Stir to coat everything evenly. Add the drained noodles to the skillet and toss well to combine all ingredients and warm through.
- Garnish & Enjoy: Serve hot, garnished with fresh cilantro and crushed peanuts.
Notes
For extra vegetables, add sliced bell peppers, broccoli florets, or snap peas along with the chicken. Adjust the chili garlic sauce to your preferred spice level. A squeeze of fresh lime juice just before serving brightens all the flavors. Using crunchy peanut butter adds a lovely textural element to the sauce.
