- 1.5 lb boneless skinless chicken thighs or breasts
- 2 cups broccoli florets
- 1 cup cherry tomatoes halved
- 1 medium zucchini chopped
- 1 small red onion sliced
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp dried oregano
- 0.5 tsp dried thyme
- 0.5 tsp garlic powder
- 0.25 tsp salt
- 0.125 tsp black pepper
- 2 Tbsp fresh parsley chopped
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the chicken pieces, broccoli, cherry tomatoes, zucchini, and red onion.
- Drizzle with olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper. Toss gently to ensure all ingredients are evenly coated.
