Ingredients
  

  • 1.5 lb boneless skinless chicken thighs or breasts
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes halved
  • 1 medium zucchini chopped
  • 1 small red onion sliced
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 2 Tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the chicken pieces, broccoli, cherry tomatoes, zucchini, and red onion.
  • Drizzle with olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper. Toss gently to ensure all ingredients are evenly coated.
  • Spread the chicken and vegetables in a single layer on the prepared baking sheet. Avoid overcrowding for best roasting results.
  • Roast for 20-25 minutes, or until chicken is cooked through and vegetables are tender-crisp. Flip ingredients halfway through cooking for even browning.
