- 200 g spaghetti or preferred pasta
- 1 tbsp olive oil extra virgin
- 2 cloves garlic minced
- 400 g canned crushed tomatoes high quality
- 0.5 tsp dried oregano crushed
- 0.25 cup fresh basil chopped
- 0.25 cup Parmesan cheese grated
Instructions
- Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package directions until al dente.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant, being careful not to burn.
- Pour in crushed tomatoes and dried oregano. Stir well and bring to a simmer. Cook for 8-10 minutes, allowing the sauce to thicken slightly.
- Drain the cooked pasta, reserving about half a cup of pasta water. Add the drained pasta directly to the skillet with the sauce.
- Add chopped fresh basil and grated Parmesan cheese. Toss everything together, adding a splash of reserved pasta water if the sauce seems too thick, until the pasta is well coated and glossy.
- Season with salt and black pepper to taste. Serve immediately, topped with extra Parmesan and fresh basil.
Notes
For an extra kick, add a pinch of red pepper flakes to the sauce. You can substitute cherry tomatoes with canned diced tomatoes in a pinch. Fresh herbs like oregano or parsley would also be great additions. Serve with a side salad and crusty bread.
