Ingredients
- 1.5 lb country-style pork ribs boneless
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 0.25 tsp black pepper freshly ground
- 0.5 tsp salt or to taste
- 0.25 cup chicken broth
- 1 tbsp butter
Instructions
- Pat the pork ribs dry with paper towels. In a small bowl, mix together smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub the spice mixture evenly over all sides of the ribs.
- Heat olive oil in a large, heavy-bottomed pan or cast-iron skillet over medium-high heat until shimmering.
- Sear the ribs for 3-5 minutes per side until deeply browned and a crust forms. Reduce heat to medium-low. Add chicken broth to the pan, cover, and let simmer for 10-12 minutes, or until ribs are cooked through and tender (internal temperature 145°F/63°C).
- Remove ribs from the pan, transfer them to a cutting board, and tent loosely with foil. Let them rest for at least 10-15 minutes before slicing.
- While ribs rest, return the pan to medium heat. Add butter and scrape up any browned bits from the bottom of the pan. Simmer until slightly reduced to create a flavorful pan sauce. Slice ribs against the grain and serve immediately with the pan sauce.
