Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 0.5 tsp ground turmeric
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 can (15 oz) chickpeas rinsed and drained
  • 0.5 cup vegetable broth
  • 3 cups fresh spinach packed
  • 0.5 tsp salt
  • 0.25 tsp freshly ground black pepper

Instructions
 

  • 1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5-7 minutes.
  • 2. Stir in minced garlic, ground cumin, and turmeric. Cook for another minute until fragrant, being careful not to burn the garlic.
  • 3. Add diced tomatoes (undrained), rinsed and drained chickpeas, and vegetable broth to the pot. Stir well to combine.
  • 4. Bring the mixture to a simmer. Reduce heat to low, cover, and let it cook for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  • 5. Stir in the fresh spinach until it wilts completely, which should take about 2-3 minutes.
  • 6. Season the dish with salt and black pepper to taste. Adjust seasonings if needed. Serve hot.

Notes

Serve with rice, quinoa, or crusty bread for a complete meal. For a touch of heat, add a pinch of red pepper flakes with the spices. Garnish with fresh cilantro before serving for extra flavor and color.
