Ingredients
- 1 tbsp olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup passata or crushed tomatoes
- 2 cans tuna in oil drained
- 2 cups short pasta like rotini or penne
- 3 cups vegetable broth or water
- 0.5 cup heavy cream
- 0.25 cup Parmesan cheese grated
- 0.25 cup fresh parsley chopped
- 0.5 tsp dried oregano

- to taste salt
- to taste black pepper
Instructions
- Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add chopped onion and cook until softened, about 3-5 minutes.
- Add minced garlic and dried oregano, cook for 1 minute until fragrant. Stir in passata or crushed tomatoes and red pepper flakes (if using).
- Add the drained tuna, uncooked pasta, and vegetable broth to the skillet. Stir well to combine, ensuring pasta is mostly submerged.
- Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15-18 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
- Remove from heat. Stir in heavy cream and grated Parmesan cheese until well combined and creamy. Season with salt and black pepper to taste.
- Garnish with fresh chopped parsley and serve immediately with extra Parmesan cheese.
Notes
For a richer flavor, use chicken or vegetable broth instead of water. Add a handful of frozen peas or chopped spinach during the last 5 minutes of cooking for added vegetables. A squeeze of lemon juice at the end brightens the flavors.
