Ingredients
  

  • 1 tbsp sesame oil
  • 1 lb chicken breast cut into strips
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 cup broccoli florets
  • 1 red bell pepper sliced
  • 1/2 cup carrots julienned
  • 4 oz rice noodles cooked according to package
  • 1/4 cup soy sauce low sodium
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1 tsp cornstarch mixed with 2 tbsp water (slurry)
  • 2 tbsp water
  • Green onions sliced for garnish
  • Sesame seeds for garnish

Instructions
 

  • Cook rice noodles according to package directions, then drain and set aside.
  • Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken strips and stir-fry until cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add garlic, ginger, broccoli, bell pepper, and carrots to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
  • In a small bowl, whisk together soy sauce, rice vinegar, honey, and 2 tbsp water.
  • Return chicken to the skillet with vegetables. Pour the sauce over everything. Bring to a simmer.
  • Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
  • Add the cooked noodles to the skillet and toss to combine, ensuring they are coated in the sauce.
  • Serve immediately, garnished with sliced green onions and sesame seeds.

Notes

Use any protein like tofu, shrimp, or beef. Adjust spice level with chili flakes. For meal prep, store sauce and cooked noodles/veg separately and combine before reheating.
