Quick Lemon Herb Salmon
A vibrant, healthy, and incredibly easy salmon dish featuring flaky fillets baked with fresh lemon, fragrant herbs, and a touch of garlic. Perfect for a busy weeknight yet elegant enough for guests.
Ingredients
- 4 slices salmon fillets
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 large lemon
- 2 tbsp fresh parsley
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Pat the salmon fillets dry with paper towels. This helps them get a nice crust.
- In a small bowl, whisk together the olive oil, garlic powder, dried oregano, dried thyme, salt, and black pepper.
- Place the salmon fillets on the prepared baking sheet. Spoon or brush the herb mixture evenly over each fillet.
- Arrange lemon slices over and around the salmon fillets. Squeeze fresh lemon juice from the remaining lemon half over everything.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary based on fillet thickness.
- Garnish with fresh chopped parsley, if desired, and serve immediately with your favorite sides.
Notes
For extra crispiness, broil for the last 1-2 minutes. Serve with roasted asparagus, quinoa, or a simple green salad. Try different herbs like dill or parsley, or add a pinch of red pepper flakes for a kick.
