Ingredients

  • 4 slices salmon fillets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 large lemon
  • 2 tbsp fresh parsley

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Pat the salmon fillets dry with paper towels. This helps them get a nice crust.
  • In a small bowl, whisk together the olive oil, garlic powder, dried oregano, dried thyme, salt, and black pepper.
  • Place the salmon fillets on the prepared baking sheet. Spoon or brush the herb mixture evenly over each fillet.
  • Arrange lemon slices over and around the salmon fillets. Squeeze fresh lemon juice from the remaining lemon half over everything.
  • Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary based on fillet thickness.
  • Garnish with fresh chopped parsley, if desired, and serve immediately with your favorite sides.

Notes

For extra crispiness, broil for the last 1-2 minutes. Serve with roasted asparagus, quinoa, or a simple green salad. Try different herbs like dill or parsley, or add a pinch of red pepper flakes for a kick.
