Quick Garlic Pasta

Ingredients
- 8 oz spaghetti or your favorite pasta
- 4 cloves garlic minced
- 1/4 cup olive oil extra virgin
- 1/2 tsp red pepper flakes optional
- 1/4 cup fresh parsley chopped
- 1/4 cup Parmesan cheese grated (optional)
- salt and black pepper to taste
Instructions
- Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup of the starchy pasta water.
- While pasta cooks, heat extra virgin olive oil in a large skillet or pot over medium-low heat.
- Add the minced garlic and red pepper flakes (if using) to the skillet. Sauté gently for 1-2 minutes until the garlic is fragrant, being very careful not to burn it, as burnt garlic can taste bitter.
- Add the cooked and drained pasta to the skillet with the garlic oil. Toss well to thoroughly coat the pasta.
- Gradually add the reserved pasta water, 1-2 tablespoons at a time, continuously tossing until a light, emulsified sauce forms and evenly coats the pasta strands.
- Stir in the fresh chopped parsley and grated Parmesan cheese (if using). Season generously with salt and freshly ground black pepper to taste. Adjust seasoning as needed.
- Serve immediately, garnished with extra parsley or Parmesan if desired. Enjoy your quick and flavorful meal!
Notes
For an extra kick, add more red pepper flakes. A splash of white wine can be added with the garlic for more depth. Freshly grated Parmesan cheese and chopped fresh parsley make excellent garnishes. You can also add a squeeze of lemon juice at the end for brightness.
