- 0.5 tsp garlic powder
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley chopped
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the chicken cubes, broccoli, cherry tomatoes, bell pepper, and red onion.
- Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and black pepper. Toss well to coat all ingredients evenly.
- Spread the seasoned chicken and vegetables in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, or until chicken is cooked through and vegetables are tender-crisp. Ensure chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven, drizzle with fresh lemon juice, and garnish with chopped fresh parsley before serving immediately.
