Ingredients
- 8 oz pasta any short shape
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 can diced tomatoes 14.5 oz
- 0.5 cup vegetable broth
- 0.25 cup fresh basil chopped
- 0.25 cup Parmesan cheese grated
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
- Stir in the undrained diced tomatoes and vegetable broth. Bring to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
- Add the cooked and drained pasta to the skillet with the sauce. Toss to coat evenly.
- Stir in the chopped fresh basil and grated Parmesan cheese. Season with salt and black pepper to taste.
- Serve immediately, garnished with extra Parmesan cheese and fresh basil if desired.
Notes
