- 1 pound boneless skinless chicken breasts
- 3 cloves garlic minced
- 1 tablespoon fresh ginger minced
- 2 cups mixed stir-fry vegetables (e.g. carrots
- 8 ounces lo mein noodles (or spaghetti/linguine) cooked al dente
- 1/4 cup soy sauce
- 1 tablespoon oyster sauce (optional
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
Instructions
- Cook noodles according to package directions; drain and rinse with cold water to prevent sticking. Toss lightly with a tiny bit of oil to prevent clumping.
- In a small bowl, whisk together soy sauce, oyster sauce (if using), rice vinegar, sesame oil, sugar, and white pepper for the sauce. Set aside.
- Heat canola oil in a large wok or skillet over medium-high heat. Add sliced chicken and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove chicken from the pan and set aside.
- Add minced garlic and ginger to the same pan and stir-fry for 30 seconds until fragrant.
- Add mixed vegetables and stir-fry for 3-5 minutes until crisp-tender.
- Return cooked chicken to the pan. Add cooked noodles and pour the prepared sauce over everything.
