Ingredients
  

  • 1 tablespoon canola oil
  • 1 pound boneless skinless chicken breasts
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 cups mixed stir-fry vegetables (e.g. carrots
  • 8 ounces lo mein noodles (or spaghetti/linguine) cooked al dente
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce (optional
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper

Instructions
 

  • Cook noodles according to package directions; drain and rinse with cold water to prevent sticking. Toss lightly with a tiny bit of oil to prevent clumping.
  • In a small bowl, whisk together soy sauce, oyster sauce (if using), rice vinegar, sesame oil, sugar, and white pepper for the sauce. Set aside.
  • Heat canola oil in a large wok or skillet over medium-high heat. Add sliced chicken and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove chicken from the pan and set aside.
  • Add minced garlic and ginger to the same pan and stir-fry for 30 seconds until fragrant.
  • Add mixed vegetables and stir-fry for 3-5 minutes until crisp-tender.
  • Return cooked chicken to the pan. Add cooked noodles and pour the prepared sauce over everything.
  • Toss gently to combine all ingredients and coat the noodles evenly with the sauce. Cook for another 1-2 minutes until heated through and well combined.
  • Serve immediately, garnished with sesame seeds or chopped green onions if desired.
