Ingredients
  

  • 2 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon dried Italian herbs
  • 2 cloves garlic minced
  • 0.5 lemon juiced
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Pat chicken breasts dry and season with salt, pepper, and Italian herbs.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken to the skillet and cook for 6-8 minutes per side, until golden brown and cooked through.
  • Remove chicken from skillet and set aside. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  • Deglaze the pan with lemon juice, scraping up any browned bits.
  • Return chicken to the skillet, spoon the lemon-garlic sauce over it, and cook for another minute.
  • Garnish with fresh parsley before serving.

Notes

Serve with a side of steamed green beans or a light salad. Adjust herbs to your preference, rosemary or thyme also work well. Ensure chicken is cooked through to 165°F (74°C).
