Ingredients
- 1 tbsp sesame oil
- 1 lb chicken breast cut into bite-sized pieces
- 2 cups broccoli florets
- 1 cup carrots julienned
- 1/2 cup bell pepper sliced (any color)
- 3 cloves garlic minced
- 1 tsp fresh ginger grated
- 1/4 cup soy sauce low sodium
- 2 tbsp oyster sauce optional
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tbsp cornstarch
- 1/4 cup water
- 2 tbsp green onions sliced for garnish
- 1 tsp sesame seeds for garnish
Instructions
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add broccoli, carrots, and bell pepper to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
- Add minced garlic and grated ginger to the vegetables, and stir-fry for 1 minute until fragrant.
- In a small bowl, whisk together soy sauce, oyster sauce (if using), rice vinegar, brown sugar, cornstarch, and water until smooth.
- Return chicken to the skillet with the vegetables. Pour the prepared sauce over everything.
- Stir continuously until the sauce thickens and coats the chicken and vegetables, about 1-2 minutes.
- Garnish with sliced green onions and sesame seeds before serving hot.
Notes
Serve over rice or noodles. For extra flavor, marinate chicken in a tablespoon of soy sauce for 15 minutes before cooking. Add a dash of sriracha for a spicy kick.
