Ingredients
  

  • 1 pound beef sirloin or chicken breast or pork tenderloin cut into 1-inch pieces
  • 2 cups broccoli florets
  • 1 cup carrots sliced
  • 1 cup potatoes diced (e.g.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt or to taste
  • 0.125 teaspoon black pepper or to taste
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the meat (beef, chicken, or pork) with broccoli, carrots, and potatoes.
  • Drizzle with olive oil, then sprinkle with garlic powder, paprika, dried oregano, salt, and black pepper. Toss gently to ensure all ingredients are evenly coated.
  • Spread the mixture in a single layer on the prepared baking sheet. Ensure vegetables and meat are not overcrowded to allow for even roasting.
  • Roast for 20-25 minutes, or until the meat is cooked through and the vegetables are tender-crisp. Flip ingredients halfway through cooking for even browning.
  • Garnish with fresh parsley, if desired, and serve immediately.

Notes

Feel free to experiment with different vegetables like bell peppers, zucchini, or cherry tomatoes. Adjust seasoning to your preference. For crispier vegetables, roast them separately for the first 10 minutes before adding the meat.
