Ingredients
- 2 1/2 cups unsweetened plain almond milk
- 2 cups old-fashioned rolled oats
- 1 cup pumpkin puree
- 2 tablespoons pure maple syrup
- 2 tablespoons flaxmeal or chia seeds
- 4 pitted dates chopped
- 1 tablespoon espresso powder
- 1 teaspoon pumpkin pie spice plus more for sprinkling
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup whole-milk plain strained (Greek-style) yogurt
Instructions

- Divide the mixture evenly among 4 (8-oz.) jars. Cover and refrigerate until thickened, about 8 hours. Just before serving, top with yogurt and sprinkle with pumpkin pie spice.
