A vibrant and versatile dressing combining the sweet-tart notes of pomegranate molasses with honey, balsamic, and fresh lemon, brightened by garlic and optional saffron.
Ingredients
- 1/4 cup extra virgin olive oil
- 2 tablespoons pomegranate molasses
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh lemon juice
- 1 clove garlic minced
- Pinch saffron threads optional
- To taste salt
- To taste black pepper
Instructions
- In a small bowl, combine the olive oil, pomegranate molasses, honey, balsamic vinegar, and fresh lemon juice.
- Add the minced garlic. If using, gently crumble a pinch of saffron threads into the mixture.
- Whisk all ingredients vigorously until well combined and emulsified.
- Season with salt and black pepper to taste.
- Let the dressing sit for a few minutes before serving to allow the flavors to meld. Stir again before each use.
Notes
This dressing is excellent on green salads, as a marinade for chicken or lamb, or drizzled over roasted vegetables. For extra depth, let it sit for 15-20 minutes before serving. Adjust sweetness or tartness to your preference. Store in an airtight container in the refrigerator for up to one week.
