Ingredients
  

  • 1 cup fresh pineapple diced
  • 0.5 medium red onion finely chopped
  • 1 clove garlic minced
  • 1 small jalapeño seeded and minced
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 0.25 teaspoon salt
  • 1 tablespoon water if needed

Instructions
 

  • Combine the diced pineapple, finely chopped red onion, minced garlic, and minced jalapeño in a medium saucepan.
  • Add the apple cider vinegar, brown sugar, and salt to the saucepan.
  • Bring the mixture to a gentle simmer over medium heat, stirring occasionally to ensure even cooking and prevent sticking.
  • Reduce the heat to low and continue to simmer for 20-25 minutes, or until the pineapple is very tender and the sauce has thickened to your desired consistency. Stir occasionally. If the sauce becomes too thick, you can add a tablespoon of water.
  • For a chunkier sauce, use a fork or potato masher to lightly mash some of the pineapple pieces directly in the saucepan. For a smoother sauce, carefully transfer the warm sauce to a blender (or use an immersion blender) and blend until smooth.
  • Allow the sauce to cool completely before serving. Transfer to an airtight container and refrigerate.

Notes

For a spicier sauce, use a habanero or scotch bonnet pepper instead of jalapeño, adjusting to your heat preference. For a smoother consistency, blend the sauce using an immersion blender or a regular blender once it has cooled slightly. A pinch of fresh ginger can be added for an extra layer of flavor. Store in an airtight container in the refrigerator for up to 7 days.
