Ingredients
- 300 g fresh wide rice noodles
- 250 g prawns peeled and deveined
- 1 tbsp vegetable oil plus more for cooking
- 2 cloves garlic minced
- 1 egg large beaten
- 100 g Chinese broccoli cut into 2-inch pieces
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp fish sauce
- 1 tsp sugar
- 0.5 tsp white vinegar optional
Instructions
- Prepare your sauce by mixing dark soy sauce, light soy sauce, oyster sauce, fish sauce, sugar, and white vinegar (if using) in a small bowl. Set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until smoking. Add the minced garlic and stir-fry for 15-20 seconds until fragrant.
- Add the peeled and deveined prawns to the wok and stir-fry until they just turn pink, about 1-2 minutes. Remove prawns from the wok and set aside.
- Push any remaining ingredients to one side of the wok. Pour the beaten egg into the empty space and scramble until just set. Break it up into smaller pieces.
- Add the fresh wide rice noodles to the wok. Pour the prepared sauce over the noodles. Stir-fry vigorously for 2-3 minutes, using your spatula to press the noodles against the hot surface to create charred spots.
- Return the prawns to the wok. Add the Chinese broccoli pieces. Continue to stir-fry for another 2-3 minutes until the broccoli is tender-crisp and everything is well combined and heated through.
