Ingredients
  

  • 1.5 cup all-purpose flour sifted
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 0.5 cup buttermilk or milk with 0.5 tbsp lemon juice

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.

Notes

Do not overmix the batter to ensure a tender cake. Test for doneness by inserting a toothpick into the center; if it comes out clean, the cake is ready. For variations, add chocolate chips, berries, or a lemon zest. Store cooled cake in an airtight container for up to 3 days.
