A simple, quick, and incredibly flavorful vegetable stir-fry elevated by the rich umami of oyster sauce, perfect for a healthy weeknight meal.
Ingredients
- 1 tbsp vegetable oil
- 3 cloves garlic minced
- 1 inch ginger grated
- 1 head broccoli cut into florets
- 1 cup carrots sliced or julienned
- 1 cup bell peppers any color
- 0.5 cup snow peas
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 0.25 tsp red pepper flakes optional
- 2 tbsp water or vegetable broth
Instructions
- Heat vegetable oil in a large wok or skillet over medium-high heat. Add minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
- Add broccoli florets and carrots to the wok. Stir-fry for 2-3 minutes until they start to soften slightly.
- Add bell peppers and snow peas. Continue to stir-fry for another 2-3 minutes.
- In a small bowl, whisk together oyster sauce, soy sauce, sesame oil, red pepper flakes (if using), and water (or broth).
- Pour the sauce mixture over the vegetables in the wok. Toss everything together until the vegetables are evenly coated and the sauce has thickened slightly, about 1-2 minutes.
- Remove from heat and serve immediately, perhaps over steamed rice or noodles.
Notes
Feel free to substitute vegetables based on what you have. Add chicken, shrimp, or tofu for a more substantial meal. Adjust chili flakes for desired spice level. Serve over rice or noodles.
