Ingredients
- 1.5 lb beef sirloin cut into 1-inch cubes
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 2 cloves garlic minced
- 1 tsp ginger grated
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 medium red bell pepper cut into 1-inch pieces
- 1 medium yellow bell pepper cut into 1-inch pieces
- 1 medium red onion cut into 1-inch pieces
- 1 medium zucchini cut into 1-inch rounds
Instructions
- In a medium bowl, combine olive oil, soy sauce, brown sugar, minced garlic, grated ginger, salt, and pepper. Add the beef cubes and toss to coat evenly. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.
- Add a cast iron grill pan to a cold oven and preheat the oven to 425˚F (220˚C). This allows the pan to heat up thoroughly.
- While the oven preheats, thread the marinated beef cubes alternately with the red bell pepper, yellow bell pepper, red onion, and zucchini onto 6 metal or pre-soaked wooden skewers.
- Once the oven is preheated, carefully remove the hot grill pan using oven mitts. Place the prepared skewers on the hot grill pan in a single layer, ensuring not to overcrowd. You may need to cook in two batches.
- Return the grill pan to the oven and cook for 10-12 minutes.
- Carefully flip the skewers with tongs and cook for another 10-12 minutes, or until the beef is cooked to your desired doneness and the vegetables are tender-crisp with nice char marks.
- Remove from the oven, let the skewers rest for a few minutes, then serve immediately and enjoy!
