Ingredients
- 1.5 lb boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 cup orzo pasta uncooked
- 4 cups chicken broth low sodium
- 0.5 cup lemon juice fresh
- 2 cloves garlic minced
- 1 tsp dried oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 cup feta cheese crumbled (optional
- 2 tbsp fresh parsley chopped (for garnish)
Instructions
- 1. Heat olive oil in a large pot or deep skillet over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- 2. Add minced garlic to the pot and cook for 1 minute until fragrant. Stir in the uncooked orzo pasta, chicken broth, fresh lemon juice, oregano, salt, and pepper.
- 3. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until orzo is almost cooked through, stirring occasionally.
- 4. Return the cooked chicken to the pot. Continue to simmer, uncovered, for another 3-5 minutes, or until the chicken is fully cooked and the orzo is tender, and most of the liquid has been absorbed.
- 5. Remove from heat. Let it sit for a few minutes before serving. Garnish with crumbled feta cheese and fresh parsley, if desired.
Notes
For added vegetables, stir in spinach or chopped asparagus during the last 5 minutes of cooking. Garnish with fresh parsley or dill for extra flavor. You can substitute chicken thighs for breasts for a juicier result.
