One-Pot Prawn & Asparagus Pasta

Ingredients
- 8 oz angel hair pasta
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 lb prawns peeled and deveined
- 1 cup asparagus chopped into 1-inch pieces
- 0.5 cup dry white wine or chicken or vegetable broth
- 2 cups water or additional broth
- 0.25 tsp red pepper flakes optional
- 1 tbsp lemon juice freshly squeezed
- 0.25 cup fresh parsley chopped
- salt to taste
- black pepper to taste
Instructions
- 1. Heat olive oil in a large pot or deep skillet over medium heat.
- 2. Add minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
- 3. Add prawns and cook for 2-3 minutes until they just turn pink. Remove prawns from the pot and set aside.
- 4. Add white wine (or broth) to the pot, scraping up any browned bits from the bottom. Bring to a simmer.
- 5. Add water (or additional broth) and bring to a boil. Add angel hair pasta, breaking it in half if needed to fit. Cook according to package directions, stirring frequently, about 3-4 minutes.
- 6. During the last 2 minutes of pasta cooking, add the chopped asparagus to the pot.
- 7. Return the cooked prawns to the pot. Stir in lemon juice and fresh parsley.
- 8. Season with salt and pepper to taste. Serve immediately.
Notes
For extra flavor, consider adding a sprinkle of Parmesan cheese just before serving. You can substitute shrimp for prawns, or add cherry tomatoes for a burst of color and sweetness. Adjust red pepper flakes to your preferred spice level.
