Ingredients
  

  • 8 oz angel hair pasta
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lb prawns peeled and deveined
  • 1 cup asparagus chopped into 1-inch pieces
  • 0.5 cup dry white wine or chicken or vegetable broth
  • 2 cups water or additional broth
  • 0.25 tsp red pepper flakes optional
  • 1 tbsp lemon juice freshly squeezed
  • 0.25 cup fresh parsley chopped
  • salt to taste
  • black pepper to taste

Instructions
 

  • 1. Heat olive oil in a large pot or deep skillet over medium heat.
  • 2. Add minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  • 3. Add prawns and cook for 2-3 minutes until they just turn pink. Remove prawns from the pot and set aside.
  • 4. Add white wine (or broth) to the pot, scraping up any browned bits from the bottom. Bring to a simmer.
  • 5. Add water (or additional broth) and bring to a boil. Add angel hair pasta, breaking it in half if needed to fit. Cook according to package directions, stirring frequently, about 3-4 minutes.
  • 6. During the last 2 minutes of pasta cooking, add the chopped asparagus to the pot.
  • 7. Return the cooked prawns to the pot. Stir in lemon juice and fresh parsley.
  • 8. Season with salt and pepper to taste. Serve immediately.

Notes

For extra flavor, consider adding a sprinkle of Parmesan cheese just before serving. You can substitute shrimp for prawns, or add cherry tomatoes for a burst of color and sweetness. Adjust red pepper flakes to your preferred spice level.
