Ingredients
  

  • 1 tbsp olive oil
  • 1 pound ground beef lean
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup sliced bell peppers any color
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1/2 cup beef broth
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheddar cheese for topping (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.
  • Stir in chopped onion and sliced bell peppers; cook until softened, about 5-7 minutes.
  • Add minced garlic and cook for 1 minute more until fragrant.
  • Pour in diced tomatoes and beef broth. Season with Italian seasoning, salt, and pepper. Bring to a simmer.
  • Reduce heat to medium-low, cover, and cook for 10-15 minutes, allowing flavors to meld.
  • Serve hot, optionally over cooked rice or quinoa, and top with shredded cheese.

Notes

Serve this versatile dish over cooked rice, quinoa, or with warm tortillas. Feel free to add other vegetables like corn or peas, or a dash of chili powder for a slight kick.
