- 1 tbsp olive oil
- 1 pound ground beef lean
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup sliced bell peppers any color
- 1 can (14.5 oz) diced tomatoes undrained
- 1/2 cup beef broth
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup shredded cheddar cheese for topping (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Stir in chopped onion and sliced bell peppers; cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in diced tomatoes and beef broth. Season with Italian seasoning, salt, and pepper. Bring to a simmer.
- Reduce heat to medium-low, cover, and cook for 10-15 minutes, allowing flavors to meld.
- Serve hot, optionally over cooked rice or quinoa, and top with shredded cheese.
