Ingredients
- 2 large boneless skinless chicken breasts
- 1 tbsp olive oil
- 8 oz cremini mushrooms sliced
- 3 cloves garlic minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese grated
- 1/4 tsp red pepper flakes optional
- 1 tsp dried Italian seasoning
- 16 oz potato gnocchi shelf-stable
- 5 oz fresh spinach
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown; remove from pan and set aside.
- Add sliced mushrooms to the skillet and cook until softened, about 5-7 minutes. Add minced garlic and red pepper flakes (if using), cook for 1 minute more until fragrant.
- Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Stir in gnocchi and bring back to a gentle simmer. Reduce heat to medium-low and cook for 3-5 minutes, or until gnocchi are tender.
- Return chicken to the pan. Stir in fresh spinach until wilted and Parmesan cheese until melted and sauce thickens slightly.
- Serve immediately.
Notes
For extra flavor, deglaze the pan with a splash of white wine after searing the chicken. You can substitute chicken thighs for breasts, adjusting cook time slightly. Fresh herbs like parsley or chives make a lovely garnish. Serve with crusty bread.
