Ingredients
- 8 ounce mascarpone cheese softened
- 1.5 cup heavy cream cold
- 0.5 cup powdered sugar
- 1 teaspoon vanilla extract
- 0.25 teaspoon cinnamon optional
- 2 cup strong brewed coffee cooled
- 1 tablespoon granulated sugar for coffee
- 24 count spiced cookies like speculoos or gingerbread
- 2 tablespoon cocoa powder for dusting
Instructions
- In a large bowl, beat the softened mascarpone cheese until smooth. In a separate bowl, whip the cold heavy cream, powdered sugar, vanilla extract, and optional cinnamon until stiff peaks form.
- Gently fold the whipped cream mixture into the mascarpone until just combined. Be careful not to overmix.
- In a shallow dish, combine the cooled coffee and granulated sugar. Dip each spiced cookie quickly into the coffee mixture, about 1-2 seconds per side. Do not let them get soggy.
- Arrange a single layer of coffee-soaked cookies at the bottom of an 8x8 inch (or similar) dish. You may need to break some cookies to fit.
- Spread half of the mascarpone cream mixture evenly over the cookie layer.
- Repeat with another layer of coffee-soaked cookies and the remaining mascarpone cream.
- Cover the dish tightly with plastic wrap and refrigerate for at least 2 hours, preferably 4-6 hours, or overnight, to allow the flavors to meld and the dessert to set.
- Before serving, dust the top generously with cocoa powder. You can also garnish with extra crushed spiced cookies.
Notes
For an adult version, add 1-2 tablespoons of coffee liqueur (like Kahlua or Amaretto) to the coffee. Ensure your mascarpone is at room temperature for a smoother cream. For best results, chill overnight. Dust with cocoa powder or extra crushed spiced cookies before serving.
