Ingredients
  

  • 2 tablespoon white miso paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon mirin
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1 tablespoon water

Instructions
 

  • In a small saucepan, combine the white miso paste, rice vinegar, mirin, honey (or maple syrup), soy sauce, sesame oil, and water.
  • Whisk all ingredients together until smooth. If the miso paste is very thick, you might need to press it against the side of the pan with the whisk to break it down.
  • Heat the mixture over medium-low heat, stirring constantly, for 3-5 minutes, or until the glaze thickens slightly and is well combined. Do not boil vigorously.
  • Remove from heat and let it cool slightly. The glaze will thicken further as it cools.
  • Use immediately or store in an airtight container in the refrigerator.

Notes

This glaze can be stored in an airtight container in the refrigerator for up to a week. For a thicker glaze, simmer for a few extra minutes. Experiment with different types of miso for varied flavor profiles; shiro miso will yield a milder, sweeter result, while awase miso will be more robust. Try it as a marinade for fish, a dressing for salads, or swirled into brownie batter for an unexpected twist.
