Miso: Beyond Soup
A bright and savory dressing or marinade made with umami-rich miso paste and zesty ginger, perfect for salads, roasted vegetables, or grilled proteins.
Ingredients
- 2 tablespoons white miso paste
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 teaspoon honey or maple syrup
- 2 tablespoons water or more to reach desired consistency
Instructions
- In a small bowl, combine the white miso paste, rice vinegar, sesame oil, grated fresh ginger, and honey (or maple syrup).
- Whisk well until all ingredients are thoroughly combined and the miso paste has dissolved.
- Gradually add water, one tablespoon at a time, whisking constantly until you reach your desired dressing or marinade consistency.
- Taste and adjust seasonings as needed, adding more honey for sweetness or vinegar for tang.
- Use immediately on salads, as a marinade for tofu or chicken, or drizzle over roasted vegetables.
Notes
Adjust sweetness and tanginess to your preference. For a thicker sauce, reduce the amount of water or add a touch more miso. Store in an airtight container in the refrigerator for up to a week.
