  • 1 pound mini bell peppers seeded and diced
  • 2 large tomatoes diced
  • 1 cup chopped fresh cilantro
  • 1 cup chopped fresh parsley
  • ½ large onion diced
  • 4 cloves garlic minced
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red-wine vinegar
  • ¾ teaspoon salt
  • ¼ teaspoon ground pepper
  • Tortilla chips for serving

Instructions
 

  • Combine peppers, tomatoes, cilantro, parsley, onion, garlic, oil, vinegar, salt and pepper in a medium bowl. Serve with chips, if desired.
