Ingredients
  

  • 2 cups all-purpose flour
  • 0.5 cup warm water
  • 0.1 teaspoon salt (for dough)
  • 1 lb ground pork or chicken
  • 2 cups napa cabbage finely chopped
  • 1 cup shiitake mushrooms finely diced
  • 0.5 cup scallions minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic minced

Instructions
 

  • Prepare the dough by combining flour, warm water, and a pinch of salt. Knead until smooth and elastic, then let it rest for 30 minutes.
  • Chop all filling ingredients finely. In a large bowl, combine the ground meat, napa cabbage, shiitake mushrooms, scallions, soy sauce, sesame oil, grated ginger, and minced garlic. Mix thoroughly until well combined.
  • Roll out small portions of the rested dough into thin, round wrappers, about 3-4 inches in diameter.
  • Place approximately one tablespoon of filling in the center of each wrapper. Moisten the edges of the wrapper with water.
  • Fold and pleat the wrappers into your desired dumpling shapes, such as crescent, half-moon, or pleated purses, ensuring they are sealed tightly.
  • Cook the dumplings using your preferred method: steam for 8-10 minutes, pan-fry until the bottom is golden brown and then steam with a splash of water, or boil in simmering water until they float and are cooked through.
  • Serve the hot dumplings immediately with your favorite dipping sauce, such as soy-ginger sauce or chili oil.
