Ingredients
- 3 cups unsweetened coconut milk beverage
- 1 cup frozen passion fruit
- 1 cup frozen mango chunks divided
- 1 teaspoon ground turmeric
- ⅓ cup chia seeds
- 4 teaspoons pure maple syrup
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt
- 2 tablespoons toasted unsweetened coconut chips
Instructions
- Place 3 cups coconut milk, 1 cup frozen passion fruit, ½ cup frozen mango and 1 teaspoon turmeric in a blender; process until smooth, about 30 seconds. Transfer to a medium bowl. Stir in ⅓ cup chia seeds, 4 teaspoons maple syrup, ½ teaspoon vanilla and ⅛ teaspoon salt. Cover and refrigerate until thickened, at least 8 hours (and up to 3 days).
- Stir the pudding thoroughly; divide among 4 bowls (about 1 cup each). Top with ½ cup thawed mango and 2 tablespoons coconut chips.
