Ingredients
- 1/4 cup soy sauce low sodium
- 2 tbsp granulated sugar
- 1 tbsp honey
- 2 tbsp gochujang Korean chili paste
- 1 tsp Korean chili flakes gochugaru
- 1/4 cup water
- 1 tbsp rice vinegar
- 1/4 tsp salt to taste
Instructions
- In a small nonstick saucepan, combine the soy sauce, sugar, honey, gochujang, Korean chili flakes, water, and rice vinegar.
- Whisk all the ingredients together until well combined and the sugar is mostly dissolved.
- Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally.
- Once simmering, reduce the heat to low and continue to cook for 5-7 minutes, or until the sauce slightly thickens to a glaze-like consistency. It will thicken more as it cools.
- Stir in the salt. Taste and adjust seasonings if necessary, adding more sugar for sweetness or gochujang for spice.
- Remove from heat and let cool slightly before using. This glaze is ready to coat your favorite cooked proteins or vegetables. Remember to season your main ingredient with salt before glazing, as suggested.
Notes
This glaze is fantastic on grilled chicken, baked salmon, crispy tofu, or stir-fried vegetables. For a thicker glaze, simmer a minute or two longer. Adjust the amount of gochujang and Korean chili flakes to suit your spice preference. A touch of sesame oil added at the very end off the heat can enhance the flavor.
