A vibrant and nutritious Korean rice bowl, Bibimbap translates to 'mixed rice'. It features a base of warm white rice topped with an assortment of sautéed and seasoned vegetables (namul), often beef or tofu, a fried egg, and a dollop of spicy gochujang (chili pepper paste). It's a colorful dish that's as healthy as it is delicious.
Ingredients
- 1.5 cup short-grain white rice cooked
- 2 cup water
- 1 tbsp sesame oil divided
- 0.5 lb beef sirloin or ground beef thinly sliced
- 2 cloves garlic minced
- 2 tsp soy sauce divided
- 1 tsp sugar
- 0.5 tsp black pepper
- 1 cup bean sprouts blanched
- 1 cup spinach blanched
- 1 cup carrots julienned
- 1 cup shiitake mushrooms sliced
- 0.5 tsp salt to taste
- 4 large eggs
- 4 tbsp Gochujang (Korean chili paste)
- 1 tbsp sesame oil for drizzling (extra)
- 1 tsp sesame seeds for garnish
Instructions
- Cook the rice according to package directions. Set aside.
- Prepare the beef: In a bowl, marinate the beef with 1 minced garlic clove, 1 tsp soy sauce, sugar, and black pepper. Set aside.
- Prepare the vegetables: In separate bowls, season the blanched bean sprouts and spinach with a tiny bit of sesame oil, minced garlic, and salt. Sauté julienned carrots and sliced mushrooms separately in a pan with a touch of sesame oil and salt until tender-crisp.
- Cook the beef: In the same pan, cook the marinated beef until browned. Set aside.
- Fry the eggs: Fry 4 eggs sunny-side up, ensuring the yolk remains runny.
- Assemble the Bibimbap: Divide the cooked rice into four serving bowls. Arrange the seasoned vegetables, cooked beef, and one fried egg neatly over the rice, creating separate sections for each ingredient.
- Serve: Add a spoonful of gochujang to the center of each bowl. Drizzle with extra sesame oil and sprinkle with sesame seeds. Instruct diners to mix all the ingredients thoroughly before eating.
Notes
For a truly authentic experience, serve Bibimbap in a dolsot (hot stone bowl) to create crispy rice at the bottom. Adjust the amount of gochujang to your preferred spice level. Vegetarian? Omit the beef and add more mushrooms or tofu. Feel free to vary the vegetables based on what's in season, such as spinach, zucchini, or bell peppers. Top with a sprinkle of sesame seeds and a drizzle of sesame oil for extra flavor.
