Ingredients
  

  • 2 racks pork ribs (St. Louis style or baby back) membranes removed
  • 1 inch piece ginger
  • 2 stalks green onions thinly sliced for garnish

Instructions
 

  • Pat pork ribs dry with paper towels. Remove the membrane from the back of the ribs, if not already done.
  • In a medium bowl, whisk together gochujang, soy sauce, brown sugar, mirin, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper until well combined.
  • Generously coat the ribs with the gochujang mixture, ensuring all surfaces are covered. Place ribs in a large shallow dish or freezer bag, cover, and refrigerate for at least 2 hours, or preferably overnight.
  • Preheat your oven to 300°F (150°C).
  • Place marinated ribs on a foil-lined baking sheet or roasting pan. Cover tightly with another piece of foil. Bake for 2.5 to 3 hours, or until ribs are very tender and meat is beginning to pull away from the bone.
  • For extra caramelization, remove ribs from oven. Brush with any remaining sauce. Broil in the oven for 3-5 minutes, watching carefully to prevent burning, or grill over medium heat for 5-10 minutes, turning frequently, until sticky and charred in spots.
  • Let ribs rest for a few minutes before slicing into individual ribs. Garnish generously with toasted sesame seeds and thinly sliced green onions. Serve hot.

Notes

For best flavor, marinate ribs overnight. You can finish the ribs on a hot grill for a smokier flavor and crispier char instead of broiling. Serve with steamed rice and a side of kimchi or quick pickles.
